Summary

El Vergel is a washed coffee from Tolima, Colombia, produced by brothers Elias and Shady Bayter at their family farm in Fresno. Grown at 1450 meters altitude on the slopes of the Nevado del Ruiz volcano, this coffee is made from the Caturra variety. The cherries undergo a prolonged fermentation before washing, a hybrid process that captures some natural character while retaining a clean profile. The cup offers notes of caramel, vanilla, berry, and bubblegum with a gentle malic acidity. Roasted for espresso.
