Summary
Orthodox is ST. ALi's original house espresso blend, a 50/50 blend of Colombian and Brazilian coffees. The Colombian component is sourced from Excelso lots, while the Brazilian component combines Mogiana and Vequis Estate natural lots. Varieties include Caturra, Colombia, Castillo, and Red Bourbon. Processed using washed and natural methods. Flavour notes include apple jam, fudge, and chocolate. It is a balanced, versatile coffee designed to work well with milk and various brew methods, including espresso, stovetop, and plunger.

Grind: Fine
Aim for a steady, honey-like pour from the 8 second mark. Pull toward the longer end of the yield (52g) for a brighter, cleaner cup. Pull shorter (46g) for more body and sweetness.

Grind: Coarse
- 1.Add coffee, pour water to half, give it a gentle stir and let it bloom for 30 seconds. (30 s)
- 2.Top up to full and place the lid on without pressing. Steep for 4 minutes total. (4:00)
- 3.Press slowly and steadily, don't rush it. Pour immediately so it doesn't over-steep.
Dose: 70g per litre. Water temp: 94°C (just off the boil).
