Summary
The Fermentation Project is a special coffee from Finca San Miguel Urias in the Antigua Valley, Guatemala, produced by Hector and Lilian Leal of Rueda Farms. This lot consists of four different processing methods applied to the same coffee: mechanically demucilaged (control), wild fermentation, lactobacillus-inoculated fermentation, and yeast-inoculated fermentation. Varieties include Caturra, H1, and Bourbon, grown at 1450-1550 meters above sea level. The project aims to highlight the effects of fermentation on flavor. Roasted for filter brewing.
