Summary
A Colombian coffee from Bella Vista, Bruselas, Huila, produced by Jhonatan Gasca of Zarza Coffee. This Extended Natural process coffee offers boozy stonefruit liquor upfront, a decadent fudge mouthfeel, and a final confectionary hit of winegums. Grown at 1750-1800 MASL, the coffee undergoes extended whole-cherry fermentation and slow natural drying on raised beds, resulting in a complex, winey, and sweet profile.

For a double, split to make 2 x ~22g single espressos. Slow & long pre-infusion with soft pressure profile; if machine jumps to 9 bar immediately, reduce times by 1-2 seconds.
