Summary
A rare Bourbon Aji variety from award-winning producer Herman Salazar in Huila, Colombia. Herman first introduced this coffee to the world in 2021 by taking 6th place in Colombia's Cup of Excellence. Fresh off the grind the aromatics are bursting with fruit notes like Orange and Black Current. The cup is elegant and layered, ranging from fruit punch to Orange segments all wrapped up in a deep agave sweetness with a whipped cream body. Natural process. Small, seasonal lot.

For a double, split to make 2 x ~22g single espressos. Slow & long pre-infusion with soft pressure profile. If machine has short pre-infusion or jumps to 9 bar immediately, reduce times by 1-2 seconds.
