The coffee is traditionally processed: picked and depulped the same day, left overnight in dry parchment, rinsed in fresh spring water, and slow-dried on covered raised beds for thirty days. It offers a sparkling clean cup with notes of fresh green grapes, sparkling lemon-lime, and sweet yellow plum, with a very light body and clean finish. This extra-light roast emphasizes clarity over acidity or sweetness.
