El Itacayo
Summary
El Itacayo is a Geisha coffee grown by Angel Arturo Paz on his 3-hectare farm in the Santa Bárbara region of Honduras. The farm is planted with 70% Pacas and 30% Geisha. This lot was processed using a 48/48 anaerobic method: whole cherries fermented anaerobically for 48 hours, then after depulping the parchment-covered seed fermented anaerobically for another 48 hours. The parchment was rinsed four times and the coffee dried for 18 days in a solar drier with hand-sorting. Refined and delicate, with focused, clean notes of melon and peach leather and a creamy body.
