Summary
This aged single-origin coffee comes from Mae Jan Tai, a village in the Chiang Rai region of Thailand. It was produced by Sinthop Chuepa, who placed 4th in the 2015 Specialty Coffee Association of Thailand competition. The coffee was processed using a Kenya-style washed method involving one night of dry fermentation after pulping and one additional night of wet fermentation, then dried on raised beds. After processing, the green coffee was aged for 7 years in GrainPro in a warehouse in Thailand, developing unique aged characteristics. The cup profile is rich and rustic with notes of cigar wrapper, cedar, dark chocolate, cinnamon spice, butter, and dried apricot.
