Summary

A nano lot from Aromas del Chirripó, a family project in Buena Vista de Rivas, Chirripó, Brunca region of Costa Rica, grown at around 2,000 m on the Los Alpes farm at the foot of Mount Chirripó. This Bourbon lot comes from about a fifth of a hectare, planted from seeds of old trees on the property. Natural processed: cherries are dried on raised beds until raisin-like, fermented in plastic bags for 5 days, then slowly dried for about a month. Medium roast with a filter profile. In the cup: strawberry, delicate floral notes and milk chocolate sweetness, medium body with a velvety texture and medium acidity, finishing with fruit and chocolate.
