The coffee underwent an anaerobic natural process with 36 hours of limited oxygen fermentation in the fruit, followed by approximately twenty days of raised-bed drying. The cup profile includes notes of raspberry, dark chocolate, red wine, and blackberry compote, with a heavily fruited profile and sweetness.
