This exceptional microlot, cultivated by Jaime Zuluaga at El Samán farm in Armenia, Quindio, Colombia, showcases the rare and distinctive Papayo variety, a unique mutation originating in Acevedo, Huila. Processed as an anaerobic natural with 36 hours of limited oxygen fermentation followed by raised-bed drying for approximately twenty days. The coffee offers a distinct fruited sweetness with tart and malic acidity. Flavor notes include blackberry, dark chocolate, umeshu, and lime. Grown at 1900 MASL elevation. Suitable for both filter and espresso extraction.
