
Colombia Inmaculada Eugenioides (anaerobic)
Summary
This coffee from Colombia's Inmaculada Coffee Farms (Holguin family) in Valle del Cauca is made from the rare Coffea eugenioides species, a progenitor of modern Arabica. Grown at 1800 MASL, it undergoes an anaerobic natural process with 36 hours of limited oxygen fermentation, then raised-bed dried. It features notes of confectioners sugar, toasted marshmallow, grilled pineapple, and cola. With naturally low caffeine (less than 25mg per 12oz cup) and a cup score of 90, this coffee was used in winning performances at the 2021 U.S. and World Barista Championships.
