A washed micro-lot from producer Edward Sandoval in Ibague, Tolima, Colombia, sourced through Onyx's partnership with Pergamino coffee. The Chiroso variety was grown at 1850 MASL elevation. Processed using the washed method with raised-bed drying. Roasted to an expressive dark level (Agtron #100.3) on a Diedrich CR-35, suitable for both filter and espresso. Flavour profile includes pear, oolong tea, raw sugar, and minerality, with delicate melon and a tea-like tactile. Cupping score of 87.
