Costa Rica: La Lajas
Summary
Costa Rica La Lajas is a single-origin coffee from the family-owned farm and ecological mill in Sabanilla de Alajuela, Costa Rica, run by third-generation producers Oscar Chacón Solano and Francisca Cubillo. Grown at 1,500–1,700 masl, the farm is predominantly planted with Caturra and Catuai varieties. The coffee undergoes a distinctive Black Diamond process: pulped with 100% mucilage intact, 100 hours of anaerobic fermentation, then dried on raised beds for 15–20 days, creating an expressive natural process coffee.
