Hacienda Sonora - Costa Rica

Summary

Hacienda Sonora is a Costa Rican coffee from Valle Central, grown at 1200-1300 masl at the foot of the Poás volcano and produced by Diego Guardia. The lot is the Caturra variety, a natural mutation of Bourbon known for delicate, complex cups with floral and fruity qualities. It is processed as a natural (bærtørket), with ripe cherries hand-picked selectively and dried whole on raised beds or patio, developing sweetness, fruitiness and a fuller texture. The cup is sweet, floral and fruity with notes of caramel, tropical fruit and chocolate, and shows good structure and sweetness, especially well suited to V60.
