The beans undergo a distinctive Reposado process involving a 72-hour pre-fermentation of ripe cherries in a cool environment, followed by pulping with retained mucilage and sun-drying in thin layers for three weeks. Grown at 1600 meters above sea level. Tasting notes include almond, date, and açaí berry.
