Summary
Colombia La Piragua Striped Bourbon is a natural-processed coffee from Palestina, Huila, Colombia, produced by Arley Vargas and his father Alexander. Grown at 1,600-1,800 masl on a 10-hectare farm using regenerative practices, this lot features Striped Bourbon variety, which genetic testing reveals is closer to Gesha than traditional Bourbon. The coffee undergoes a double fermentation: 72 hours oxidised followed by 98 hours anaerobic in barrels with degassing valves, then slow-dried over 15-20 days. Tasting notes include black cherry, melon, and cacao.
