Summary
This Geisha lot from Jhonatan Gasca's Bella Vista farm in Bruselas, Huila, Colombia. The lot is composed of 30% green cherries (pinton) and 70% fully ripe cherries, harvested together to avoid loss from rain. It undergoes a 168-hour extended fermentation process including anaerobic whole cherry fermentation (72h), depulping and mucilage fermentation (48h), and extended enzymatic fermentation (48h), followed by a thermal shock and slow drying on raised beds for 20-25 days. The cup presents characteristic Geisha floral aromas with pronounced sweetness and herbal undertones.
