Summary
A specialty coffee from Colombia, produced by Jhonatan Gasca of the third-generation family project Zarza Coffee in Bruselas, Huila. The Bourbon Rose variety is grown at 1750-1800m elevation and processed using a Natural Anaerobic Thermal Shock method involving selective harvesting, pre-fermentation oxidation, yeast-inoculated fermentation, thermal shock, and slow sun drying on Marquesina beds for 20-30 days. Flavour notes include raspberry, blueberries, cherry candy, and floral notes.
