Summary
This coffee comes from Finca El Paraíso, a 10-hectare farm in Ocotal, Nueva Segovia, Nicaragua, run by producer Hipolito Acuna. Grown at 1500-1650m altitude, the Java variety undergoes a Natural Carbonic Maceration process: hand-picked cherries are fermented in sealed, temperature-controlled tanks before being dried on raised beds under shade. The cup offers floral notes with raspberries, praline, plums, and milk chocolate. The farm practices agroforestry and is part of the Bridazul project, supporting small-scale producers in the region.
