Summary
Single-origin coffee from El Vergel Estate in Fresno, Tolima, Colombia, developed since 2010 by the Bayter family. The lot is made from ripe Red and Yellow Caturra cherries processed with a natural anaerobic method: 48–60 hours of anaerobic fermentation, drying in a marquesina to 30% moisture, mechanical drying below 45°C, pre-stabilization, and 45 days of final stabilization in GrainPro. The cup is intense and liqueur-like with brandy, yellow plum, and banana bread sweetness, dense structure, ripe fruit, and delicate citrus energy.
