It is part of the Forest Coffee project, which combines innovative processing, education and transparent trade. The lot is made of ripe Red and Yellow Caturra cherries. The coffee undergoes 48–60 hours of anaerobic fermentation, is dried in a marquesina to 30% moisture, then mechanically dried below 45°C, pre-stabilized and finally stabilized for 45 days in GrainPro. It offers an intense, liqueur-like character with distinct sweetness — brandy, yellow plum, banana bread — dense body, ripe fruit and delicate citrus energy. Suitable for espresso and filter.
