Costa Rica Diego Robelo Jardín Red Honey
Summary
A small-lot blend from Diego Robelo's experimental coffee garden at Aquiares Estate on the slopes of Turrialba Volcano, Costa Rica. The lot combines Bourbon, Ethiopian Landrace, Gesha, IPR 107, SL-28, SL-34 and Typica varieties grown at 1,400 MASL. It undergoes a 20-26 day Red Honey fermentation, with a generous layer of mucilage left on the parchment, two days of pre-drying, then 18-24 days on African raised beds in a solar dryer at 28-40°C, finished through a Guardiola washer. Expect juicy red grape, tart dried cranberry and a silky vanilla-whipped-cream body.
