Victor Bonilla's Aruzi is a washed coffee from Finca La Chorrera, located in La Argentina, Huila, Colombia at 1,900 meters above sea level. The farm is solely dedicated to the rare Bourbon Aruzi variety. This third-generation coffee grower and Q-Grader selectively harvests ripe cherries, de-pulps them the same day, ferments the wet parchment in sealed barrels for 36-40 hours, and dries it in marquesinas for 15-18 days. The cup profile offers black cherry, chocolate and date notes with a medium-plus body, medium-plus sweetness, mellow acidity, and a buttery texture.
