This washed Maragogype coffee comes from Finca Timbuyacu in San Nicolás, Rodríguez de Mendoza, Peru. Produced by Alfonso Tejada Iberico and Karim Rosario Araoz Grandez, the farm spans 68 hectares with 38 hectares of preserved forest. The coffee undergoes selective handpicking, pulping, 192 hours of fermentation, thorough washing, and 15-20 days of drying. Flavour notes include passion fruit, ripe peach, and brown sugar with a silky texture and clean, tapering acidity. The variety is Maragogype, a Typica mutation first identified near Maragogipe in Brazil. Grown at 1,620 meters above sea level. Light roasted for filter brewing to highlight bright tropical character and long sweetness.
