
Los Chelazos
Summary
Los Chelazos is a regional blend from approximately 25 smallholder farms in the Citalá and La Palma areas of Chalatenango, El Salvador, grown in the Montecristo Trifinio Nature Reserve at 1600-1800 masl. Varieties include Pacas, Pacamara and Bourbon. Most coffee is washed processed with a short in-cherry fermentation (reposado), then pulped, fermented for around 12 hours in tanks, and dried on raised beds or concrete patios. The blend has been sourced every harvest since 2015 through Caravela and is a key component of doubleshot's ERA espresso.
