Summary
Mexico Chiapas is a 100% Arabica coffee from the Sierra Madre mountains in the Chiapas region, grown at 1200-1600m altitude on volcanic soil by local smallholder farmers. It is wet-processed and sun-dried. The coffee features Typica, Bourbon, and Mundo Novo varieties. Roasted to Full City (dark) level, it offers a medium-bodied, syrupy cup with sweet notes of cane sugar, milk chocolate, dark chocolate, hazelnut, and caramel, making it one of the sweetest coffees in the roaster's selection.
