Peru has nearly 90,000 hectares of certified organic coffee-growing area, making it one of the world's leading organic coffee exporters. 25-30% of Peruvian small farmers belong to democratically organized cooperatives. Lima Coffee in the Cajamarca region, led by Rony Lavan, sources from small farmers cultivating 2-3 hectares. This regional blend of Catimor, Caturra, Bourbon, and Typica varieties was processed using the washed method with spontaneous fermentation. Flavour notes include quince, molasses, and walnut.
