T'ika – Peru
Summary
Single-origin Peruvian coffee from the La Cueva farm in Cajamarca – Jaén, produced by Aurora Huamán. Bourbon and Caturra varieties grown at 1,889 masl, processed as traditional washed with aerobic fermentation, where the coffee ferments in contact with oxygen before washing, density sorting and outdoor drying. T'ika means "flower" in Quechua, and the cup is markedly floral: rose leads, with raspberry bringing lively clean acidity, caramel adding body and sweetness, and tamarind on the exotic, tangy finish. Works well as espresso, gaining density and intensity, and as filter, where it opens up more floral and delicate.
