San Ignacio is a natural-processed blend of Pache, Bourbon, and Typica varieties from the San Ignacio region in Cajamarca, northern Peru. It combines day lots from producers in Chirinos, San José de Lourdes, and Tabaconas, selected for their heavily fruited, complex, and floral cup profile. Grown at 1700–1900 m with medium acidity, it offers notes of peach, honey, rooibos, strawberries, and lavender. Cupping score 85+. Recommended for filter brewing.
