A washed Gesha coffee from the Casona plot of Santa Lucia farm in Comayagua, Honduras, run by Fincas Mierisch. The Gesha variety, planted in 2014 from seed sourced from Panama's Don Pachi Estate, yields a floral and delicate cup with jasmine, brown sugar, and fresh berries, and crisp acidity. Cherries were picked at peak ripeness, floated, depulped, dry-fermented for 36 hours, washed, and dried slowly on raised beds in a shade greenhouse over 16 days.
