Summary

Brazil, Colombia and Ethiopia · mostly washed and natural lots

Olisipo Coffee Roasters is a specialty coffee roaster based in Lisbon, Portugal, roasting small batches on their own premises every week. Founded in 2018 by coffee explorer Antony Watson and co-founder Sofia Gonçalves after a bicycle trip to Ethiopia opened his eyes to coffee's spectrum of flavour, the roastery sits in the authentic Ajuda neighbourhood. They're dedicated to transparency, traceability, and trade justice, working with trusted partners to source responsibly. Their line-up showcases diverse origins and brew-method-friendly roast profiles, with fresh drops like the Ethiopian Chelbesa. It's coffee as a connector—of people, communities, and positive change. For the love of coffee, indeed.
