Kōyō Specialty Coffee is a specialty coffee roaster based in Aljezur, Algarve, Portugal, founded by Gyula Illés in 2021. Illés, a former barista trainer and competition judge, set out to showcase the best seasonal plantation coffees. So they buy small lots, never blend, and rotate offerings with the harvest. Each coffee gets its own roasting recipe on their PROBAT, with separate profiles for espresso and filter. The aim is clean, bright, fruity cups that honor the farmer's work.
