Guatemala Jimenez
Summary
Guatemalan specialty coffee from Finca Familia Jimenez in Buena Vista, Huehuetenango, grown at 1600-1800 m by second-generation producer Pascual Jimenez and his family. The classic Bourbon variety is hand-picked, depulped, dry-fermented for 40 hours, washed, density-sorted and dried 8-10 days on parchment before resting about three months in Huehuetenango. The region's microclimate yields lively acidity and a clean, fruity profile, rounded by chocolate sweetness. Tasting notes: peach, orange, hazelnut, chocolate.
