FES Portillo is a coffee from Finca El Salvador, owned by fourth-generation producer Rodolfo Ruffatti in Santa Ana, El Salvador. The Portillo variety is part of Rodolfo's Hybrida project, named after legendary producer Salvador Portillo. The coffee undergoes 72-hour cherry maceration (anaerobic fermentation) followed by natural drying, a signature technique that develops complex fruity notes. Tasting notes include redcurrant, plum, and candied fruits, with bright, intense acidity and tropical fruit accents. Suitable for espresso, moka pot, French press, Aeropress, and cold brew.
