Guatemala Sierra De Los Cuchumatanes Bio
Summary
This special Arabica coffee grows in the highlands of the Sierra de los Cuchumatanes near Huehuetenango in northwestern Guatemala. At altitudes of 1,200 to 1,950 meters, the coffee cherries ripen slowly, developing a complex aroma profile. The washed processing and careful handwork of the producers ensure a balanced, round cup. Main notes recall hazelnut and butter cookie, accompanied by fruity cranberry. The finish shows a fine sea buckthorn note, giving the coffee a pleasantly lively freshness. The coffee comes from the cooperative Asociación Chajulense, which unites many smallholder farmers of the Maya-Ixil community. The organization emerged after the severe consequences of the Guatemalan civil war and contributed to the reconstruction of the region. A characterful, directly traded specialty coffee with balanced acidity, harmonious body, and an origin that is perceptible in every cup.
