The estate is owned and operated by Ashok Patre and is an organic/biodynamic farm with Rainforest Alliance certification. This coffee is from the Catuai varietal, grown at 1350-1450 masl. It undergoes a 72-hour carbonic maceration natural process with terroir yeast and lactic fermentation, then dried on raised beds for 31 days. The cup profile features notes of medjool dates, tomato vine, and toasted pinenuts.
