Finca San Lorenzo, Guatemala
Summary
Finca San Lorenzo is a Guatemalan coffee from the Valdés family, grown near San Cristóbal Verapaz in the cool, rainy region of Cobán at around 1,550 metres above sea level. The farm covers 110 hectares under coffee with 35 hectares of forest conservation. Varieties are Caturra, Catuaí and Sarchimor, fully washed after mechanical pulping, up to 36 hours of fermentation, washing and a 24-hour soak, then dried on patios and in greenhouses. The cup is exceptionally balanced with rich sweetness and clarity, showing notes of dates, dried cranberry and a smooth toffee sweetness.
