Summary
Pink Bourbon variety grown by Octavio Rueda in the Palestina region of Huila, Colombia at 1,830 masl. Processed using a meticulous washed method: hand-picked at peak ripeness, floated to remove defects, held in-cherry overnight, de-pulped, fermented underwater for 80 hours, washed, and dried on raised beds until reaching 10.5% moisture content. This end-of-season lot from El Mirador is an exceptional example of Pink Bourbon's potential, with Octavio's coffee being purchased for several years due to its consistently high quality. Pink Bourbon has been identified genetically as an Ethiopian Landrace variety.
