A washed coffee from Finca Santa Rita in Juayua, Sonsonate, El Salvador, produced by Mauricio Escalon. The farm, with a history dating back to the 1940s, is situated at 1500-1700 meters above sea level. Varieties include Pacas and Bourbon. The coffee is processed at the Cafescal Mill, where cherries are pulped the same day, fermented, washed, and sun-dried on clay patios. Flavour notes include honeydew melon, finger lime, and peach. Roasted as an omni roast, suitable for both filter and espresso.
