El Mirador
Summary
A washed Pink Bourbon microlot from Wilder Lasso's farm El Mirador in San Adolfo, Huila, Colombia. Grown at 1700-1750m in volcanic ash soil, this coffee offers a distinctive floral and hoppy profile with notes of hops, hibiscus tea, and red apple. Wilder, a veterinarian by trade, took over the family farm in 2017 and now produces some of the most interesting coffees in Huila. The coffee underwent 30 hours of under-water fermentation before being gently washed and dried in temperature-controlled conditions.
