
Uganda Sironko
Summary
Uganda Sironko is a light roast coffee from the Mount Elgon region in Uganda, produced by Ibrahim Kiganda at Mountain Harvest farm. Sourced from the Buginyanya and Mayiyi farmer groups, only the ripest cherries with a minimum Brix reading of 17% are selected. The coffee uses Nyasaland, SL14, and SL28 varieties and undergoes an experimental anaerobic fermentation for 120 hours in sealed barrels with a PK1 yeast culture, bringing extra complexity and a playful character to the cup while keeping it clean and balanced. After fermentation, the coffee is dried on raised beds in the sun for 3-5 days, then slowly shade-dried until it reaches 10.5% moisture. It then rests in a temperature-controlled warehouse to let the flavours settle.
