Cimarrona Washed is a single-origin coffee from Finca El Retiro in Guatemala's Chimaltenango Department, produced by Nando Diaz. It is made from the Cimarrona Bourbon variety, a Bourbon mutation identified by Anacafé, and is processed using the washed method and roasted light. The cup opens with aromas of sweet tea and candied almond, featuring a round body with notes of cinnamon, peanut brittle, and apricot, balanced by mellow starfruit acidity and a finish of roasted hazelnut and caramel.
