Summary
Single-origin coffee from Ecuador's Intag Valley, produced by Jose 'Pepe' Jijón at Finca Soledad. A rare Sydra varietal, a hybrid of Red Bourbon and Typica, processed using the Sydra Oxidized (SyOxy) method: a variation of washed processing with aerobic fermentation, 48-hour sealed tank fermentation in mucilage, then washed and dried in indirect and direct sunlight for 20 days. Tasting notes include green grape, honeysuckle, matcha, cocoa powder, and custard apple. Cup score 90. Roasted light/medium and intended for filter brewing.
