Ecuador Hacienda Legrand Robusta Lactic Natural
Summary
Ecuador Hacienda Legrand Robusta Lactic Natural is a specialty-grade Robusta coffee from Hacienda Legrand farm in the Coastal Santa Elena province of Ecuador, owned by the Bustamante family. The coffee is of the Ecu-robusta variety, a compound hybrid developed on the family's original farm. Processed using a Lactic Natural method: whole cherries fermented anaerobically with a lactic acid producing yeast strain for over a week, then dried on raised screens. Tasting notes include creamy vanilla, coconut, mulled wine, and oak. Scored 92 points on Coffee Review. Suitable for both espresso and pour-over brewing.

Recipe from 2016 Ecuador Barista Champion Mario Idrovo. Robusta produces a lot of crema, so volume can be deceptive; crema settles after brewing.
