This coffee comes from Maunawili, an 80-acre research farm on the east coast of O'ahu, Hawaii. Produced by Juli Burden, it features Pink, Yellow, and Red Bourbon varieties processed using an anaerobic yeast natural method. Whole coffee cherries undergo a 96-hour oxygen-free fermentation with a secret yeast strain, then are dried in a refrigerated room. The coffee offers flavor notes of wine, tropical fruit, and nuttiness with an intense sweetness and vibrant fruitiness.
