Peru Finca Pacpa - Filter
Summary
A washed coffee from Peru, produced by Manuel Marlo Baca at Finca Pacpa in the Amazonas region. The farm is located at 1850 meters above sea level and cultivates Bourbon, Geisha, and Pacamara varieties. This lot is Pacamara, processed with a double fermentation: cherries rest for 18 hours in GrainPro bags, then are pulped and fermented again for 18 hours until Brix ~15 and pH 4.5, followed by controlled solar drying for 25-30 days. Tasting notes include floral, fruity, high sweetness, and juicy, with flavours of glace cherry, mandarin, and panela.
