Summary
Single-origin coffee from Norbil Perez's Finca La Chirimoya in the Callayuc region of Peru, grown at 2,250masl. The Yellow Bourbon variety undergoes an extended fermentation washed process: hand-harvested, floated for density selection, fermented for 50 hours, pulped, fermented again for 42 hours, then washed and dried on raised African beds over 17-18 days. Norbil Perez is a founding member of the Aromas del Valle Co-operative. Flavour notes include rum and raisin and blood orange.
