Summary
A single origin coffee from Colombia's Quindio region, produced by Felipe Arcila at the Jardines del Edén farm. This lot features the Sidra variety processed using the EF2 (Extended Natural Fermentation) method: the coffee cherries undergo a dry aerobic fermentation for 24 hours, followed by 50 hours in sealed GrainPro bags at below 22°C, then dried on raised beds until 11% moisture content is achieved. The result is a tropical and slightly funky flavour profile with notes of papaya, apricot and orange. The farm uses biodynamic farming methods focused on soil health and biodiversity, with its own waterfalls and springs supporting a closed-loop ecological system.
