Summary
Yellow bright is a Colombian coffee from the Huila region, produced by Alexis Silva and Alberto Gutiérrez. The coffee is grown at altitudes between 1600 and 1900 meters above sea level. Varieties include Castillo and Caturra. The processing involves a honey maceration carbonic co-fermentation, where cherries undergo 12 hours of aerobic fermentation before being delivered to Los Patios processing facility. There, a commercial peach concentrate and a proprietary solution are added, followed by a 2-day fermentation and absorption phase, then sun-dried for 12-16 days. The cup profile features notes of peach, candy, citrus, and vanilla.
